Meals that normally take 5 hours on high in the slow cooker can be on the table in an hour with my Instant Pot. Even better, I can forget to defrost something for dinner and still have dinner ready in an hour! How does it get better than that?

Instant Pot Italian Beef Dinner
This Instant Pot Italian Beef Dinner is super easy to make and it’s fairly flexible. I used a Certified Angus Beef® Brand Chuck Steak to begin with. It’s an affordable cut of meat that’s easy to cook. It comes out super tender in the Instant Pot. If you have stew meat, you can use that too. Or, you can start with a pot roast. It’s amazing either way.

Ingredients
- 3 lb beef chuck steak or roast
- 3 lbs potatoes
- 3 cups baby carrots
- 1/4 cup water
- 1 cup of spaghetti sauce
Instructions
- Put the potatoes on the bottom of the Instant Pot.
- Then layer carrots over potatoes.
- Add the water.
- Put the beef chuck roast over the carrots.
- Mix the tomato sauce and the water and pour it over the roast.
- Cook on meat/stew setting for 45 minutes.
- After 45 minutes, let the steam naturally release before opening.

This Instant Pot Italian roast was one of my husband’s favorite meals in the Instant Pot. He’s definitely a meat and potatoes kind of a guy. If you’re looking for a Paleo Italian Beef Instant Pot recipe, simply leave out the potatoes or substitute turnip or parsnips instead. If you have leftover beef, I highly recommend you make a Pressure Cooker Italian Beef Sandwich.
Pressure Cooker Italian Beef Sandwich
Just heat the beef and shred it using meat claws and serve on a Kaiser roll. You can add extra spaghetti sauce if you like. It’s one of our favorite ways to enjoy leftover beef. To enjoy a “sandwich” without bread you can serve this on lettuce leaves or use a Paleo wrap.
